Broth Bowl

Lately, I love to devour my meals via broth bowls. Even in the summer, it’s an easy, different way to consume my food. There’s a place in St. Louis called HotPot and they have amazing, fresh broth bowls with ingredients sourced locally, but now that I’ve moved and live farther away from said restaurant, I neeeeed to get my healthy food and broth bowl fix!

I was tooling around in the kitchen and threw this together pretty quickly. Here’s how I made mine:

Ingredients:
1 – Grilled Chicken Breast (We grill a large batch of chicken breast at the beginning of the week, but you can cook yours however you’d like)
1 – 10oz. can of Campbell’s Chicken Broth
Handful of Zucchini & Squash Noodles (I use the Spiral Slicer by Kitchen Supreme to make my noodles and it’s so quick and easy!)
Handful of pre-cut Sweet Peppers
Handful of Spinach leaves

Directions:
1) Heat the Chicken Broth according to the instructions on the can. I microwaved mine and it was warm and tasty!
2) Cut chicken breast to size of choice.
3) In a bowl, layer the zucchini and squash noodles on the bottom, add the peppers, spinach leaves then chicken.
4) Pour heated chicken broth over the ingredients to your desired amount.
5) Enjoy your yummy bowl!

As you can tell, I wasn’t very exact with my veggie measurements since everything was pre-cut, but you can add as much or as little as you’d like. Same with the broth and chicken – I used the whole can of broth and just one chicken breast but may add more of both for next time. Either way, it’s a healthy meal you can whip up in a few minutes, which makes me love it even more!
